In Malta, the strawberry harvest season lasts for several months, culminating in the annual Festa Frawli (Strawberry Feast) in April, a celebration of everything strawberry, held in the village of Imġarr. Recipe of the strawberry roll by The Snop
Ingredients
For the biscuit (génoise)
Eggs: 5,5
Flour: 165 gr
Sugar: 140gr
Butter (melted): 20 gr
Baking powder: 1,5 teaspoon
Vanilla: in powder or liquid
For the strawberry compote
Strawberries: 800 gr
Sugar: 100 gr (mix of white and sugar cane)
Water: 4 tablespoons
Preparation
Heat the oven to 200° Celsius
Separate the yolks from the whites
Beat the yolks with the sugar using the electric beater
Add the sifted flour and baking soda and vanilla, and beat a little
Beat the whites and add a teaspoon of sugar half way
Line the baking tray with baking paper
Brush the baking paper with the melted butter
Spread the mixture on the baking sheet, smoothing the top and edges
Bake 10 minutes
Remove from oven and immediately roll up with baking paper
Allow to cool, then unroll and remove baking paper
Spread the strawberry compote on the cake, roll up and keep rolled into a plastic film until serving.
